Myanmar Ruby Hills
ZERO WASTE - CROP 2020
Ruby Hills Estate is located in Mogok, an extensive mountainous area in the north of Mandalay, and it takes its name from the famous and prized rubies that originate from this region. This area is inaccessible to foreigners, and access is granted only with government permission.
Arrow Brothers manages this 65-acre farm at an elevation ranging from 1220 to 1590 meters above sea level. Currently, they exclusively cultivate the Catimor H528 variety (originating from Thailand), but by 2022, they plan to introduce microlots of new varieties, including Gesha, Pacamara, SL-34, and Blue Mountain.

More Info
This microlot is the finest coffee produced this year by Ruby Hills Estate. It is cultivated in a separate 10-acre plot with only 5000 plants. The cherries are harvested at their peak ripeness and processed within 4 hours of picking. The fermentation process lasts between 48 to 72 hours in 25-liter barrels. After fermentation, the coffee is sun-dried for approximately 20 to 24 days.
