The generic quality SHG (Strictly High Grown) EP (European Preparation) is a quality standard for Honduran coffee. "Strictly High Grown" indicates that the coffee is grown at high altitudes, typically above 1,200 meters above sea level. The high altitude contributes to a slower maturation of the beans, developing a complexity of flavor and balanced acidity.

EP (European Preparation) refers to the process of selecting and preparing coffee beans. During this phase, the beans are carefully selected to remove any defects or impurities. Subsequently, they undergo washing, drying, and preparation before being packaged and marketed.
