Produced together with JYN Coffee, a local partner committed to supporting and empowering the farming communities of Bajawa, this lot comes to life at elevations between 1200 and 1500 MASL, within an environment where volcanic soil, dense forests, and a tropical climate contribute to creating an intense and highly distinctive sensory profile.
The cherries are handpicked only at peak ripeness, following the natural pace of the plant and undergoing a rigorous daily selection directly at harvest.

LOKA TUA is processed through an Anaerobic Wet Hulled method with inoculated fermentation.
After a careful manual selection of ripe cherries, the coffee undergoes controlled anaerobic fermentation using selected yeasts, guiding the aromatic development with precision and clarity.
Once fermentation is completed, the lot continues through the traditional Indonesian Wet Hulled process, an iconic method that contributes to the characteristic body and sensory depth of Flores coffees.
The following drying and resting phases allow the aromatic profile to stabilize and harmonize slowly, resulting in a cup that is intense, complex, and deeply connected to its origin.
